The biggest thing about jazz is that it's usually unpredictable, which makes it difficult on audiotool. Also, it generally doesn't follow a scale, with saxophone notes flying all over the place. Coming up with a chord progression that switches scale a few times while still sounding nice, then putting some notes that sound nice on top of it is usually a good way to start. Have fun!
