Generally, shuffle (or "swing" in other DAWs) helps make rhythms and percussion sound less mechanic and monotone. It does this by shifting every second 16th. note in time, a bit earlier for a more "urgent" feel or later for a more loose or "relaxed" feel. The best way to understand it is to try it: Just get a drum machine on your arrangement, program a simple pattern with hihats on every 16th. note, then activate the swing for it and change the swing value. You'll hear the differences in timing.
