the knobs on the bottom of the machiniste let you change the pitch, pan, cut the sample from the beginning and the end, and some other stuff. For volume, I think you have to use the centroid.
Maybe i didn't specify enough, i know how to turn the knobs and stuff, but how do i create a pitch track, volume track, or end track so i can adjust it any way i want?
If you mean how can you automate those knobs so that their values change over the length of the track, just right-click the control and choose "Automate control" from the context menu. You'll see a new track in your timeline where you can create key-frames, etc.
