Am I able to change the time signature?

Im trying to put odd jazz numbers through the "Minimoog" type thing and I need to change the time signature

Do you mean changing the lengths of the notes?
"odd jazz numbers" wouldn't be affected by the time signature.
If that's the case, what you want is to change the snapping amount.
Commonly, jazz uses odd triplet positions, so you want the amounts with the T (1/8T, 1/16T, 1/32T)
